
This was a very important structure before refridgeration.
Milk would turn sour in a day without cooling and butter and eggs
would spoil soon after. Cool water of about 56 degrees on the earthenware
allowed for some flexibility in keeping food and drink fit for consumption.
The Spring House was built over the spring so that water would be
at its coldest point when it entered the Spring House.
